Healthy and Light Fruit Pizza

Fruit Pizza Ingredients

For the crust:

-One Box Back to Nature Honey Graham Sticks (or one box square graham crackers)
-One Medium Banana
-One Tbsp Honey

For the filling:
-Six Ounces Vanilla Greek Yogurt
-Two Cups TruWhip (or any light whip topping)
-Two Tbsp Unsweetened Shredded Coconut
-Diced fresh fruit of your choosing (i.e. strawberries, blueberries, bananas, kiwi, grapes, raspberries,peaches, pineapple etc)

To make the crust:

-Preheat the oven to 350 degrees. Place grahams in a large bowl. Crush the grahams with a cup. You could use a blender or food processor, but don’t crush into a dirt consistency. You want the grahams to have a couple crunchy pieces left.

 Add the banana to the crushed graham crackers and combine with either an electric mixer or your hands. Place ball of dough onto a greased cookie sheet and roll out until crust is flattened. Fold the outer edges in and pinch the sides to form a crust. Drizzle the honey over the crust and spread with a spoon.

Place crust in the oven and bake for approximately 20 minutes ( keep an eye on it so the edges don’t burn). When finished, let crust cool completely on the cookie sheet before moving (if moved too soon it will break in half!). Crust will harden as it cools.

To make the filling:

-While crust is baking, combine TruWhip and Greek Yogurt in a bowl and place in the fridge to thicken ( about 20 minutes).

-Once the crust has cooled, add the whipped topping to the center of the crust and spread evenly. Decorate the pizza however you’d like

-For storing, place the fruit pizza in the refrigerator. The whipped topping with thicken up even more!
