“Doc, I just can’t relax! That word is not in my vocabulary.” Unfortunately, this epidemic is everywhere! I hear this on a daily basis from patients who experience chronic muscle tension, especially in combination with high stress or anxiety. This chronic state of tension has a negative effect on not only the musculoskeletal system, but the nervous system as well. One of the reasons, in my opinion, that we are seeing more and more of these symptoms is because our food does not contain as high of value of our minerals that it once did. Yes, eating vegetables and fruits is still, and will always be, a better choice than a diet lacking in those foods. However, the body’s individual mineral needs may not be met without the addition of supplementation.
An article published in 2011 from the Scientific American stated the following: “A Kushi Institute analysis of nutrient data from 1975 to 1997 found that average calcium levels in 12 fresh vegetables dropped 27 percent; iron levels dropped 37 percent, vitamin A levels 21 percent, and vitamin C levels 30 percent. A similar study of British nutrient data from 1930 to 1980, published in the British Food Journal, found that in 20 vegetables the average calcium content had declined 19 percent, iron 22 percent, and potassium 14 percent. Yet another study concluded that one would have to eat eight oranges today to derive the same amount of Vitamin A as our grandparents would have gotten from one.” Wow! Consider that this information, although published in 2011, does not contain data from the last 20 years. We certainly have not improved and the more that GMOs and poor farming practices are allowed in the US, the worse the numbers will get.
